As those of you who’ve been keeping up with the blog are aware, I recently took a road trip through California. For a few years now, I’ve known about the giant nut butter machines at Whole Foods, where you can fill a tub with warm, freshly ground nut butters at the push of a button. How awesome is that? Among the nut butter varieties on offer: honey-roasted peanut butter. O. M. G. Back when I was in New York over New Year’s Eve, I got just a little tub to try. Learn from my mistake and get a nice big tub – it’s absolutely amazing!

So of course I wasn’t going to hold back from loading up this time around. It’s so damn good that I even had plans to get extra to take back to Germany. But since those sealable plastic tubs aren’t particularly robust, I came up with the brilliant idea to stash my honey-roasted peanut butter in my hand luggage. Long story short: my peanut butter and I were separated at LAX, my husband laughed himself silly (“Did you seriously put peanut butter in your carry-on?”) and then asked straight-up: “Why don’t you just make it at home yourself?” Oh … right. Why didn’t I think of that.

When I got back to Hamburg, I experimented a little with making my own honey-roasted peanut butter. I’m pleased to share the (super quick and simple) recipe with you here:

Recipe: Honey-Roasted Peanut Butter

glass (approx. 250 ml)

ZUTATEN:
  • 5 tbsp Honig
  • 200 g Erdnüsse salted
ANLEITUNG:
  1. Den Honig in einer beschichteten Pfanne erwärmen. Die Erdnüsse darin karamellisieren, anschließend abkühlen lassen.
  2. Die Erdnüsse dann in einem Hochleistungsmixer* zu Nussmus verarbeiten.

Since this PB is sweetened with honey (obviously), it’s more of a healthier sweet for me than a food I consume in great quantities. That is, a special treat – but a super delicious one! :-)
