When my book Zuckerfrei – Die 40 Tage-Challenge was published last year, I wasn’t yet aware of how hard it would be for many participants to do without their beloved bread (Phase 1 of the Sugar-Free Challenge is gluten-free). The book contains a bread recipe made from whole-grain spelt flour, but spelt contains gluten, so that doesn’t work for Phase 1 (however, you can modify the Spelt Chia Bread on page 62 by replacing the spelt flour 1:1 with buckwheat flour).

At the beginning of last year’s Challenge, I posted the recipe for my Gluten-Free Coconut Bread with Cottage Cheese, which was adapted from a recipe in my book Coconut Cooking*.

As you may already know, store-bought breads – even the ones from bakeries – often contain added sugar. That’s why I’m excited to share a new sugar- and gluten-free alternative to conventional bread today! It’s super quick and easy to make, and you don’t even need a baking pan: just form a simple loaf using your hands.

Gluten-Free Chickpea Flour Bread: Sugar-Free Challenge {Phase 1}

ZUTATEN:
  • 160 g sunflower seeds
  • 40 g pumpkin seeds
  • 100 g chickpea flour*
  • 100 g flaxseeds
  • 35 g chia seeds *
  • 25 g psyllium husks*
  • 1–2 tbsp bread seasoning*
  • 1 tsp salt*
  • 2 tbsp apple cider vinegar*
  • 250 ml water
ANLEITUNG:
  1. In a high-speed bender, grind the flaxseeds. Add ground flaxseeds and other ingredients to a bowl along with 250 ml of water and kneed into a dough.
  2. Transfer dough to a loaf pan lined with baking paper OR using wet hands, form a loaf of bread from the dough and place it on a baking tray lined with baking paper.
  3. Let ingredients soak for at least 10 minutes. In the meantime, preheat oven to 180˚C (top and bottom heat).
  4. Bake the bread in the preheated oven (middle rack) for 65 minutes. If using a loaf pan, remove bread from pan after 50 minutes and bake for another 15 minutes on a baking tray lined with baking paper.
  5. Remove bread from oven and let cool thoroughly before serving (cooling will ensure that the bread holds together).
