Here it is: the dessert for my Clean Eating German Christmas menu! My Baked Apple Parfait has been a classic in my family for a few years now. Everyone who’s tried it loves it!

This Baked Apple Parfait is based on traditional German Bratapfel (literally: “roast / baked apple”), which is stuffed with raisins, marzipan, spices, and nuts, drizzled with vanilla sauce – and sometimes boozed up with liquor or wine – and tends to be loaded with sugar, too (which is why I developed my own version!). It’s a traditional Christmas dish that’s usually made with Boskoop apples, with are firm, tart, and aromatic, but you can use any kind of apple that you’d traditionally use for apple pie.

Here, we start out with the Bratapfel concept, but instead of baking the apples, we sauté them in butter on the stovetop before adding spice and lemon juice, combining the mixture with raisins, and layering it in jars with a vanilla cream mixture to make a parfait. Did I mention how beautiful these parfaits are? :-)

If you want to swap out the (homemade!) Pumpkin Spice, the baked apple spice from Just Spices* also works great here (obviously) – just be aware that it contains some raw cane sugar. I find that the apples, raisins, and almonds are sweet enough on their own. Try it out for yourself and see what you like! :-)

Clean Eating German Christmas Menu – Dessert: Baked Apple Parfait

ZUTATEN:
  • 4 apples
  • 1 tbsp Butter
  • 1 tbsp Pumpkin Spice homemade if possible!
  • 2 tbsp lemon juice
  • 40 g raisins
  • 200 g cream
  • 250 g Quark or Greek yogurt
  • 250 g Mascarpone
  • 1/2 tsp ground vanilla* or 1 tsp pure vanilla extract
  • 40 g ground almonds
  • 20 g sliced almonds
ANLEITUNG:
  1. Wash, core, quarter, and chop apples. Heat butter in a small pot and sauté apple pieces. Add pumpkin spice and deglaze with lemon juice and 100 ml water. Let simmer for 15 minutes, stirring occasionally. Fold in raisins.
  2. Remove two tablespoons of cream and set aside. Whip the rest of the cream until stiff and re-add the two tablespoons of cream as well as the quark and mascarpone. Add ground vanilla and almonds and combine.
  3. Fill four glasses by alternating layers of cream with sautéed apples so that each glass has four layers.
  4. In an unoiled pan, toast sliced almonds on low heat until they become aromatic. Sprinkle over top layer of apples.
