You all know how much I love strawberries – right?! I can’t imagine anyone not taking full advantage of strawberry season. And it’s no secret that I’m also a big fan of coconut – my book Coconut Cooking,* which was was published at the beginning of the year, is proof of that.

Sweet summer strawberries are total bliss when combined with tangy coconut yogurt, which I’ve discovered only recently (find out how to make your own here). Throw in some tart lime and you get the perfect warm-weather breakfast!

I garnished my overnight oats with coconut flakes and various berries, but you can let your imagination run wild! Enjoy :-)  

Strawberry Lime Overnight Oats with Coconut Yogurt

ZUTATEN:
  • 150 g strawberries frozen
  • 125 g coconut yogurt
  • 150 g buttermilk or non-dairy alternative
  • 1 pinch ground vanilla* or 1/4 tsp pure vanilla extract
  • 1 squeeze lime juice
  • 50 g oaoat flakes*
  • 10 g millet flakes* or other whole-grain flakes
ANLEITUNG:
  1. Wash strawberries and remove stems. Blend or purée with coconut yogurt, buttermilk or milk alternative, vanilla, and lime juice.
  2. Stir in oat and millet flakes and let sit uncovered in the fridge overnight.
  3. The next morning, garnish with the fruit of your choice.
