Are you guys familiar with mochi rice? It’s a short-grain rice variety that’s extra chewy and used in a lot of East Asian desserts. Because it’s slightly sweet, it fits perfectly into this awesome Macadamia Cranberry Energy Ball recipe. 

Cranberry Macadamia Energy Balls with Mochi Rice

ZUTATEN:
  • 300 ml almond imlk or water
  • 120 g mochi rice
  • 1 generous pinch ground vanilla* or 1/2 pure vanilla extract
  • 250 g macadamia nuts
  • 200 g Cranberries*
ANLEITUNG:
  1. In a saucepan, heat almond milk with vanilla. Add mochi rice and cook for about 35 minutes, stirring occasionally.
  2. In a high-speed blender,* blend cooked rice with macadamia nuts an cranberries to form a paste.
  3. Roll mixture into 12 energy balls.
