Hello my dears! Though I’m not really a Valentine’s Day kinda person, I decided to spontaneously whip up a little V-Day recipe yesterday. The result: Coconut Date Pralines with Raspberries. This recipe is as easy as it gets, since it only requires three ingredients. The only one that might be a little tricky to track down is freeze-dried raspberries – I bought mine a few months ago at Hamburg’s outdoor covered Isemarkt market, but you can also get them online,* as well as at some organic shops. Freeze-dried raspberries are sweet and tart and crunchy and go great with the classic coconut-date combo – you’ll fall right in love.

Coconut Date Energy Balls with Raspberries

ZUTATEN:
  • 120 g dates dried and pitted
  • 80 g shredded coconut*
  • 2 tbsp freeze-dried raspberries
ANLEITUNG:
  1. Process dates and shredded coconut in a high-speed blender* and form into 5–6 balls with clean hands.
  2. Crush freeze-dried raspberries and roll energy balls until they are coated.
