When I first heard about Berlin chef Attila Hildmann’s “Amaranth-Joghurt-Pop” from his book Vegan for fit,* I just knew I had to make it. Amaranth Yogurt Pop is delicious, healthy, and super easy to prepare – and it looks awesome, too!

Alright, well I did have a few reservations at first: popped amaranth just looks a little dry and dull! But I wised up. ;-) At first, I was faithful to the original recipe – soy yogurt, popped amaranth, raspberries, and coconut flakes – but it wasn’t long before I started experimenting. I’ve now made Amaranth Yogurt Pop with dairy and non-dairy yogurts, several types of fruit, and a variety of different toppings.

Today I tested a new version: yogurt layered with fresh plums and topped with honey-roasted walnuts. I loved it, but it also passed the most important test: my boyfriend and sister loved it, too!

Ingredients
  • 400 g vegan yogurt or dairy yogurt
  • 4 tbsp popped amaranth*
  • 6 plums*
  • 1 handful walnuts
  • 2 tbsp coconut blossom syrup*

  • 4 tbsp popped amaranth*

  • 1 handful walnuts

Instructions
  1. Combine yogurt and popped amaranth.
  2. Wash, dry, and pit plums and cut flesh into small pieces.
  3. In a pan, heat coconut blossom syrup and walnuts together for a few minutes.
  4. In two serving glasses, alternate layers of yogurt-amaranth mixture and plum mixture. Top with caramelized walnuts.
Recipe Notes

If you want less sugar, feel free to leave out the coconut blossom syrup and just dry roast the walnuts. :-)
